Note for next time: Put less jam in croissants, and only near the middle.  In the oven, it heated, oozed, and burned.. everywhere.  Damn.

They also didn’t rise out of the freezer as I had hoped.  I had them thawing and proofing for 5 hours and they didn’t get much bigger.  I guess I’ll go back to a 2-day recipe, rather than interrupting the steps with the freezer.
