For years, I’ve been confusing the delicious long johns that I used to get at the small town bakery near where I went to school with the noble eclairs, so I always believed that eclairs were deep fried.  I’m not good at deep frying (partially I’m frightened of it after being involved in a deep-frying accident when I was younger and partially I find it difficult to control the temperature of the oil), so, as much as I wanted to try making eclairs, I never wanted to waste the time.  However, after actually reading a recipe, I found out that they are baked!  Baked!  This makes them much more possible.  Now I just need to find an excuse to make a few dozen…
